Method:

  1. Clean mushrooms and place them in salted boiling water  with a pinch of turmeric for few minutes; then strain and slice the mushrooms and set aside.
  2. Add oil in a heavy bottomed vessel. Once hot,  add  mustard, once it pops add fennel seeds and saute well.
  3. Add sliced onion with 1/4 salt, keep and cover. Cook in low flame for 5-8 minutes.
  4. Add black pepper powder and mix well.
  5. Add crushed ginger garlic and green chilies saute on medium heat for few minutes and toss constantly (we don't want them to burn).
  6. Add the sliced mushrooms, place lid and cook on medium flame until soft and cooked. Stir in between till all the liquid is absorbed.
  7. You can add lime juice if you fancy a tangy taste at this stage. If not transfer to a serving dish. Enjoy.

Cooking time : 20 minutes.

I have eaten mushroom fry in restaurants, but I don't think I can make it. I mean considering my (non-existent) culinary skills right now :)
