Chocolate Swiss roll with cream filling.

Chocolate Swiss roll with cream filling.

Egg - 4 (separate egg and yolk)
Caster sugar - 100gm
Self rising flour - 4 tablespoon (little more than 1/4 cup)
Coco powder - 3 tablespoon (little less than 1/4 cup)
Vanilla essence - 1/4 teaspoon
Caster sugar - 1 tablespoon(for rolling)
Melted butter - 2 tablespoon

Filling
Whipped Cream - 200gm
Sugar - as sweet as you want (I use 1 tablespoon)
Method:
Preheat oven to 180 degree C, for 10 minutes
In a flat baking tray, place a grease paper.
Beat the egg yolk and sugar over a hot pot of water for 2,3 minutes.
Add melted butter and beat for few seconds.
Mix cocoa powder and flour together.
Beat this with the egg mixture.
In another bowl (clean dry), beat egg white for 2,3 minutes.
Fold this with flour mixture.
Sprinkle 1/2 tablespoon sugar in the grease paper and spread the flour mixture evenly.
Bake for 10-15 minutes. (check around 12 minutes)
When cake is done, allow this to cool, for an hour. Here comes the trick, now place this in fridge for another 2 hours.

Filling:
Beat the filling ingredients together and prepare a thick paste.
Turn the cooled base to a clean flat plate or place a grease paper in your work surface and place the cake on top of it. Spread the filling mixture on top of the base and roll gently. Then wrap tight with cling film, place this back in fridge for another few hours and allow this to settle.

Carrot Halwa

Grated Carrot - 500 gm
Milk - 1/2 cup
Condensed milk- 1 cup
Ghee or butter - 100gm
Cardamon powder - 1 tbsp

For frying-
Dry Nuts & fruits - few
Raisins- few.
Cardamon - split - 3


Method:

Heat ghee/butter, in a pan and fry nuts & fruits and cardamon.
Fry raisins for one minute, and remove this from heat.
Low heat and add grated carrots and mix well. Stir fry in medium heat for another 5 minutes. Add cardamon powder, stir well and fry for another two minutes.
Add the milk and cook this covered in low heat for 30 minutes, make sure the carrot is covered with milk, if necessary add more enough to cover the carrots.
After 15 minutes add the condensed milk and mix well.
After 30 minutes remove the lid and stir well the mixture in high heat, till you get a very dry mixture.
Garnish with nuts, raisins and cardamon.

Apple and Cinnamon muffin a complete vegan recipe

Preheat oven to Gas-mark 4/180c


Grated apple - 1 
A. All purpose flour - 1 cup
Salt - A pinch
Baking powder - 1tbs
Cinnamon powder - 1 tbs
Coconut powder - 2 tbs
 B.
Sugar - 3/4 cup
Cleared butter - 1/4 cup
Water - 1/4 cup
Vanilla essence - 2 drops


Grease the muffin trays with butter. 

A. Stir together flour, salt, baking powder, cinnamon powder. Keep this to one side
B. Beat sugar, butter and Vanilla essence, beat with water add the flour mixture one spoon at a time and mix well.
C. Add grated apple and fold well.
D. Transfer this to the muffin trays and bake for 20 to 25 mnts
B. Beat veg oil vanilla sugar and

Rasamalai

Rasamalai an easy Indian Dessert :

Whole cream milk - 1/2 ltr or two cups.
Sweetened condensed milk - 2 full spoon.
Crushed cardamon - 1/4 tbsp
Dry Milk powder - 1/2 cup (use full cream ones)
Egg white - 1/2 - a small spoon full egg white.
Baking powder - 2 pinch
Any flouring of your choice like Vanilla essence, rose water etc.. - 1 or 2 drops.

Method.
1.Mix the egg yolk, baking powder and milk powder together with a drop of flouring agent (if you are using any) and make a small lemon size balls. Flatten this gently on palms. Keep this flatten pieces on a tray lightly dusted with flour.

2.In a heavy bottom pan boil milk with cardamon.

3. Once this started boiling, reduce heat and carefully place our prepared discs to this. You can use a spoon and transfer the discs using a fork.

4. Keep some space between the discs, because they will expand once they cooked. Reduce the heat and allow this to cook for 15 - 20 minutes in low flame. ( I keep a wooden spoon in the milk)

5.Don't mix or stir.

6. Check one disc to see it is properly cooked.

7. Once you feel it is cooked add condensed milk as per your taste.

Taste best when it is served chilled...so enjoy this and let me know...:)

Orange pudding steamed version

1.Orange juice- 1 ½ cup
Sugar – 1 tbsp (depending on the sweetness of orange juice)
2.Orange one small
Sugar – 1 ½ tbsp.

3.Milk – 1 ½ cup
Cornflower – 1 ½ tbsp.
Custard powder – 1 ½ tbsp.
Vanilla essence – 1 ½ tbsp.
Sugar – ½ tbsp
Egg – 2

Preparation.

1.Allow orange juice to boil with sugar and keep this aside.

2.Caramelise orange with sugar and arrange this in the serving dish.

3.Combine cornflower and custard powder with ¼ cup of cold milk

4.Boil and cool this milk. Beat egg with sugar. Then add vanilla essence and pour milk slowly and beat well combine the prepared cold milk with this.

5.Mix this with the prepared orange juice mixture.

6.Take a deep pan with enough space to cover a metal rack and the dish. Place the metal rack or small kitchen motor (motor and pestle) inside the pan. Cover the dish with aluminium foil (really tight I use extra aluminium foils and place this dish on top of the motor and fill the pan with hot water till the edge of that motor). And cook this in low heat for 60 minutes to 90 minutes.


Serve hot or cold..:)

Bread and Butter Pudding

Bread and Butter pudding.

1.White Bread( crust removed)- 6 slices.
Butter - 3 tsp.

2. Sugar - 1 tsp.
Almond and/or cashew - 3 tsp.

3. Egg- 1
Milk - 1 cup.
Vanilla essence - 1 tsp ( or according to your taste).
Cardamon powder and cinnamon powder- 1/4 tsp.
Custard powder- 1/2 tsp (optional)

4. Raisins or dry fruits- 3 tsp.

5.Sugar- 1tsp (optional).

Jam - 2 tsp (optional).

Method.

1.Fry almond and cashew in sugar in a non stick and once cashew is coated with sugar. Take this out of pan ( It will be a bit sticky) and powder this.

2. Apply butter to both sides of bread.

3. In the serving dish (if you are using oven, then oven proof dish) apply a little bit butter and spread half of the powdered mixture and give the dish few shakes.

3.Place 2 bread slices in this dish and spread one tsp fruit mixture. Repeat this process with remaining bread and fruit mixture.

4. Warm milk, please do not boil.( If you are using micro wave less than a minute).

5. Beat egg and Vanilla essence together with the powders. Then slowly add the milk and beat well.

6. Pour this over the bread pieces.

Baking method.

Steam.


1. You can cover this in aluminium foil. Then steam this. Pour 1/4 water in to a steamer and steam in high flame for 10 mnts then lower the flame and for another 10 mnts.Remove from heat and tet this remain in in the foil for another 10 mnts. You can serve this hot or cold.


Over Bake:

Spread that 1 tsp sugar on top of the pudding.

1.Pre-heat oven. Fill boiling water in a baking try(half) and place the pudding dish. Bake in 180 degree for 45 mnts.

2.Warm the jam in a non stick pan and spread this on top of the pudding and bake in gas mark 6 for further 10mnts( optional).

Serve warm.

Palpayasam

Easy Palpayasam / Milk and rice pudding (Pressure cooker version).

As any other malayali I am a huge fan of Payasams. My onam nostalgias
are always associated with payasams. Thinking about Palpayasam is
making me homesick again. Unlike other desserts this one has another
speciality. A temple in south India named Ambala puzha Sree Krishana
Temple is so famous for this palayasam as an offering to Lord Krishna.
After Onam I was thinking about preparing a payasam for Mr. P. May be
that was my excuse for preparing this payasam for my taste buds . I
have seen my amma preparing this payasam and was so sure it is going
to eat half of my Friday. So I thought I will go for the easy pressure
cooker version.

(Some pre-cooking preparations)

Boil water in the pressure cooker you are supposed to cook and rinse
well even the lid and weight.

Ingredients and preparation method.

1.Milk , Sugar and Raw rice (yes that read one). Ratio is 4 : 1: 1.

Means if you are using 4 cup milk, use 1 cup raw rice, 1 cup sugar.

Must ingredient. A very clean stainless steel spoon.
Optional ingredients.

1.Cardamom pods 2,3 .
2.Cashew nuts or raisins roasted in gee = few.
3.Condensed milk = ½ cup (if you are using condensed milk reduce the
amount of sugar to ½ cup)
Method.

1.Pressure cook the rice, sugar, crushed cardamom and milk don’t
forget to put that clean spoon.
2.After first whistle reduce the heat to low and let this cook in low
flame for a further 45 mins.(This slow cooking will give the rice that
pure milk taste).
3.Remove from heat and leave this for 10- 15 mins.
4.When it is cooled down remove the lid, remove the spoon  and add
the condensed milk and heat again for few mins. Stir well.
5.Garnish this with roasted raisins.

Banana pudding/ Nenthra pazham payasam.

Nenthra pazha payasam/Plantain Dessert

1.Medium sized ripe plantain- 2
2. Ghee or cleared butter- 4 tspn.
3.Crushed Jagerrey or sharkkara- 1/2 cup.
4.Thick coconut milk- 1 Cup.
5. Cashews, raisins and coconut pieces- 1/2 cup.
6.Crushed cardamom pods- 1 or two.


Method:

1. Cut the plantains into one or two pieces and steam till it is soft. I Microwaved them in high for 10mnts.

2. Remove the steams and black layer inside and mash well with your hand.

3.Heat ghee in a pan and fry this banana mixture for 5 mnts. I microwave them for 5 mnts in high uncovered. Stir in-between.

4. Add crushed jagerrey fry for another 10- 15 mnts or microwave for another 15 mnts.

5. Mix half cup of coconut milk with half cup of water and pour to the mixture let this boil in low flame, or microwave for another 2 mnts.

6. Remove from heat and mix this with the remaining thick coconut milk and add crushed cardomom pods. Garnish this with fried nuts,raisins and coconut pieces.


P.S:
You can use milk made if you want.

I was running out of cashew nuts, so I used almonds.

You can add small pieces of fried plantain.

A few drops of vanilla essence will give you a different taste.

Strawberry Shake.

Ingredients:

Fresh Strawberries = 6
Milk = 1 cup
Sugar = To taste.
Ice -cubes

How to make strawberry shake:
1.Wash strawberries and remove the stems.
2.Blend strawberries with ittle milk together to get a smooth paste.
3.Add the remaining milk, sugar.
Blend it all once again
Served chilled in glasses.

Sunday dessert.

Sunday Dessert : Plum in spiced Redwine syrup.

Sugar- 100gm
Wine (Red wine or dessert wine)-100ml
Cinnamon stick-1
Cardamon pods-2,3
Other fvrt spices -1 or two.
Plums-halved and stoned-100gm
Full Plum-4
Method:
1.Put the sugar and wine into a large, deep bowl. Put in the spices, uncovered and cook for 4 - 8 minutes on HIGH, stirring occasionally to help dissolve the sugar.

2.Add the halved plums and cover the bowl with cling film and cook in high power for 8mnts stir occasionally.

3. Add the full Plums and cook this cover in medium heat for 3-5mnts check inbetween.

4. Allow this too cool in that syrup for few hours or keep refrigerated before serving.

5. Serve with fresh Ice cream.

P.S This syrup can be used as a topping for pancakes, cakes or any other dessert of your choice enjoy..

What we need?

For one Dosa

1. Dosa batter = 1 1/2 spoon
2. Cheese grated = 1/2 spoon
3. Curry leaves = few
4. Grated ginger= less than 1/4 tspoon
5. Finely chopped green chilli = 1/2
6. Small onion finely chopped= 1
Simple way..
1. Pour dosa batter into the Tava.
2. When one side is almost done Sprinkle the other ingredients on top of this dosa or pancake and fold it..:)

Mango pudding + chocolate sauce

Mango pudding with chocolate sauce and a small slice of strawberry??
I love that combination. For me chocolate sauce and strawberry is a summer favorite . Same with mango pudding and chocolate sauce. But few days back my desert was this three together (:P)the yummy puddy mango slice, with sweet and rich chocolate sauce, and the juicy strawberries worked for me. Would you like to give it a try?


Mango Pudding:

Ingredients:

1.Mangopuree= one can
or
Out of three mangos.( small slices blend well with 1/4 cup of water).
2.Sugar=3/4 cup.
3.Mango slices=from one mango.
4.Butter melted=1 tspoon.
5.Unflavored or mango flavored gelatin = 2 packets or 1 table spoon full.
6.Fresh milk=11/4 cup.
7.Water=1 Cup
8.Whipping cream=1/4 cup(whipped which I avoided).
9.Coconut powder=1 tspoon.

How to make Mango Pudding.
1. Bring water to boil, then remove from heat and add gelatin and sugar, stir well till it dissolves and gets a smooth consistency.

2.Mix mango puree,milk, and coconut powder together and stir well. Now add the whipping cream,small mango slices and mix well again.

3.Mix this with sugar and gelatin solution.

4.Brush butter on the bowl we are going to prepare our pudding. Transfer the already prepared mixture to this bowl.

5. Chill this mixture in a refrigerator for 3-4 hours before serving.

Chocolate sauce:

1.Any chocolate=1 cup
2.Milk=1 cup.
3.Butter=50gm
4.Vanilla essence= few drops.

My way of making:
Prior warning..Dont add everything together please...

1.Take a small pan and add fill it with 1/4th water and bring it to boil.
2.Take another round shaped bowl (preferable one is that can sit on top of the bottom pan).
3. Keep the second bowl on top of the bowl with boiling water. (keep your hands safe girls) check whether the bowl is touching the boiling water, if yes that is not good. What we need is the steam from the other bowl.
4.Now add milk and vanilla essence and mix well.
5.After two minutes we can start adding our chocolate portions, start by simple portions.
6.Once it starts melting add butter,stir well.
7.Now add chocolate.
8.Taste the sauce once you get that smooth consistency you can stop adding chocolate to the mixture. If you want you can add the whole cup or you can stop by adding just half cup.
(Same with the butter. The trick is to get a silky smoothie sauce once you got that you can stop the process.)

P.S : As I knew I am going to have my pud with chocolate sauce I greased the pudding bowl with chocolate sauce.
